Down and Dirty—and Delicious Colorado Springs

Down and Dirty—and Delicious

From rockin’ music to vibrant LED lights, it’s a party 24/7 at T-Byrd’s Tacos & Tequila. And the tacos are to die for.

Try the sriracha ranch chicken tacos, and you’ll be a believer. Crispy fried chicken is smothered in queso, pickled peppers, and sriracha ranch dressing and then piled high on a flour tortilla. It doesn’t get any better. Or how about the Pineapple Express? Once a taco of the month, customers kept requesting it, so it’s on the permanent menu. Tender pulled pork combined with roasted pineapple bits, fried onions, and sweet Thai chile sauce creates a fiesta in your mouth.

Dirty Bird
A graduate of the culinary schoOL at the Art Institute in Denver, Chef Noah has opened successful restaurants from Wyoming to Colorado Springs. Most recently, he was executive chef and general manager of Beasts and Brews in the Springs.

If tacos aren’t your jam, order the crispy wontons, five little pillows of flavor stuffed with carnitas and queso. Hungry for sweets? Sink into the caramel-filled churros. Served with local honey, they’ll become your guilty pleasure.

Cocktails are always flowing at T-Byrd’s from margaritas and sangria to Sex on the Peak (you’ll just have to try it!).

For all you Westsiders, there’s cause to rejoice. A second T-Byrd’s is expected to open soon. It’ll even have a ghost kitchen serving The Dirty Byrd’s famous wings and fries for takeout and delivery.

The Dirty Byrd

Guess what’s moved next door to T-Byrd’s? The Dirty Byrd!

This high-energy sports bar is serving up whiskey and wings. Word is they’re the best wings you’ve ever had. And with six big-screen TVs to choose from, you can root for all your favorite sports teams from football to basketball and beyond.

If pool’s your game, come on down; there’s a table ready for some friendly competition.

And, while you’re cheering on your teams, you can nosh on Chef Noah’s menu—from chicken sandwiches, burgers, salads, and hand-dipped corn dogs to elevated shareables, such as fried cheese curds, crunchy chicken chicharrónes, and house-made fried pickles.

Bird Tree Café

With its colorful, hand-painted murals and twinkling lights, Bird Tree Café and Bar offers a warm, welcoming vibe. Comfy and laid back, it’s a place where you can linger all day—to study, hang out with friends, or meet your colleagues for work meetings.

“We are proud to offer a scratch coffee and cocktail bar with everything made fresh in house,” says Allie Johnstone, manager.

Bird Tree Cafe
From pastries and sammies to burgers and charcuterie plates, Bird Tree Café is downtown’s newest meeting house.

And Chef Noah’s creative menu offers everything from early morning lattes and fresh, buttery, light kolaches to after-dinner charcuterie plates with pitchers of sangria.

Joy Love, bartender/barista, says, “We’re happy to whip up any cocktail you’d like.” But Bird Tree’s most popular cocktail by far is the frozé. “A vodka and rosé mixture, it’s flavorful, not too sweet but refreshing and definitely craveable,” says Crystal Byrd. But don’t ask for the recipe. It’s top secret.

It’s the perfect spot to sit and enjoy a hot buttered rum as you watch the snowflakes gently fall in Acacia Park.

Mood Tapas Bar

Urban and chic with a big-city vibe, Mood Tapas Bar is the perfect place to take friends and family for an evening of classic Spanish tapas and innovative new entrées.

For a twist on a traditional dish, order the piquillo rellenos. Delicate and sweet, these piquillo peppers are stuffed with a flavorful mix of beef, pork, veal, and goat cheese and then nestled in a creamy romesco sauce.

Mood Tapas

For true umami flavor, try the Wagyu filet—either on the tasting menu or as an entrée item to share. This perfectly cooked, melt-in-your-mouth steak is topped with grilled oyster mushrooms that are tossed in a mix of Worcestershire, soy sauce, shallots, and garlic. Accompanied by a delicate sweet potato puree, it’s an unforgettable taste sensation.

“Mood” is playfully conveyed with brightly colored LED lights that the staff changes daily and craft cocktails with innovative names, such as Green with Envy (a mix of vodka, lime juice, cucumber, and mint) and He Made Me Blush with dry gin, watermelon puree, bitters, and soda.

Mood is wine-centric, serving everything from house to high-end selections. Can’t decide which one to choose? Jimmy Porcadilla, assistant general manager, has the answer: “We have wines that fit everyone’s personalities and moods.”

District Elleven

Enter through the safe in Mood Tapas Bar, and you’ll find yourself in a secret passageway. Once a vault to store expensive clothing and furs, this walkway leads guests to a 1920s-inspired speakeasy, right in the heart of downtown.

District Elleven, with its swanky, cozy vibe, invites you to lounge on comfy couches or linger in intimate booths to enjoy high-end whiskeys and craft cocktails. For example, the Lord of the Bones, a tasty twist on a classic Old Fashioned, is made with bone marrow–washed whiskey, sugar, and BBQ spiced bitters, and the itisWHatitiZZ, is a specially made tiki drink served in a pirate’s mug.

District Elleven offers 181 top-notch whiskeys, but if you prefer even more exclusive, harder-to-find whiskeys, put your name on a waiting list to become a member. You can rent a locker for a year to hold premium whiskeys available only to a lucky few.

To accompany the spirits, Chef Noah has taken small bites and shareables to a new level. Don’t pass up the crispy brussels sprouts. District Elleven’s most popular dish, it combines the richness of confit duck with the creaminess of a poached duck egg for the perfect bite.

Every Sunday is comedy night at District Elleven, and the place is rockin’. If you’re into dressing up, come as a pirate, and you’ll get a shot of rum.
